Apple Charlotte

Ingredientes:

120g (4oz) fresh white breadcrumbs (check what you are allowed)
60g (2oz) soft brown sugar
60g (2 oz) caster sugar
¼ tsp. ground cinnamon
grated rind and juice of one lemon
60mls (2 fl oz) MCT oil
480g (1 lb.) cooking apples


Serves: 4 - 6


Oven temperature: 190°C (375°F) or gas mark 5

Method:

Mix thoroughly the breadcrumbs, all the sugar, cinnamon and grated lemon rind.
Add the oil and mix well
Peel, core and slice the cooking apples
Put a layer of the bread crumbs mixture in the bottom of a 900mls (1.5 pint) pie dish, followed by a layer of apples
Repeat these two layers then pour over the juice of the lemon
Finish with a layer of the bread crumb mixture
Bake for 35 – 40 mins until the top is crisp and the apples are tender
Serve with either custard made with MCT Oil or with Snowy topping.
