Ingredientes:
90g (3oz) long grain rice
180g (6oz) cooked smoked haddock
1 hard boiled egg white – chopped
45mls (1½ fl oz) MCT Oil
Salt
Cayenne pepper
1 lemon
Parsley to garnish
Serves: 4-6
Method:
Cook rice in boiling salted water and drain
Flake haddock and mix with rice, chopped egg white and oil in a saucepan, heating gently
Season to taste with a pinch of salt and a small pinch of cayenne pepper
Add the juice of half a lemon
Serve garnished with lemon wedges and chopped parsley
